Raw cacao pudding – delicious guilt-free recipe

From the moment I found out that I was pregnant, I made a long list of foods and ingredients that I couldn’t eat – for baby’s safety. Thanks to Google, YouTube and all the pregnancy phone apps for that! I can recite them even in my sleep.

Being so conscious about what I put in my mouth, I tend to choose the healthier option of most things. I look at how my fruit and veg have been sourced and I prepare most of my meals at home. I used to eat healthy before pregnancy and I don’t particularly have a sweet tooth, but lately I’ve allow some yummy deserts to sneak into my diet. Mostly homemade food, of course. And I don’t overdo the sweet, so I won’t have to struggle with my post-labour shape.

Raw cacao pudding

So here is one of my favourite recipes that I invented myself. It’s raw, delicious and too-good-to-keep-a-secret…

For 2 servings, you need:

  • 1 banana
  • 1/2 avocado
  • 1/2 cup of milk (use almond milk to make it vegan)
  • 5 gr honey (or more if you want it sweeter)
  • 2 tablespoons cacao powder
  • 1 handful cacao nibs

Cacao nibs

These unsweetened Colombian Cacao nibs that I found at Graze are my absolutely favourite! They don’t spoil the taste of whatever you’re making with extra sugar, only add some of that distinctive cacao flavour. They are rich in fibre, high in protein and iron, made from crushed cold-pressed cacao beans and are ideas for anything from cereal to smoothies, from fruit salads to baked cookies.

If you follow my daily smoothie recipes on Twitter or Facebook, you’ve probably noticed that I use them all the time. Raw cacao is good for baby and times better than a regular chocolate bar, if you have pregnancy cravings.

How to make

Put all the ingredients in your favourite blender or food processor and blend until you get a smooth velvet texture. Portion the cacao pudding into cups or bowls. You can top it with a little grated chocolate, banana slices or berries – anything that makes an Instagram-worthy picture.

It’s ready to eat! It’s that simple.

Prepare this raw pudding for a romantic dessert for two or just as a treat for yourself. I’m sure you will love it 🙂
