Weekend Brunch

I remember the smell of my childhood… that was to wake up from the smell of homemade pancakes or banitsa (I’ll have to show you banitsa another day). Even if I didn’t like eating much – I think I actually used to hate food at the time – the aroma would make me get up and check what my grandma was cooking.

This weekend I thought it was time to recall this memory and cook something yummy for brunch. It’s a weekend so my man didn’t get up for an early breakfast and I took my time to do some cooking. After a good Friday night, a good healthy food is essential.

I made a ton of pancakes with cottage cheese inside… mmm I love the melted cheese! Two fillings: tuna with peppers and grilled veg with balsamic vinegar. There were green olives, capers and honey to sprinkle over.
